I know there arnt more than one Eletric/Ghost pokemon but if the forest gym for example changed to Grass/Fighting then if the leader had breeloom and heracross could they have 2 random poekmon due to the open slots?

Yes.

Not to give away anyones team, but I know there are at least two gyms doing this right now.

(Sadly, Grass/Rock doesn't allow that kind of flexibility)

Heracross is Bug Fighting though. But yeah I catch your meaning. Essentially you have to have 3 of each type, example

Boulder Gym is Rock Water

Rock
Kabutops
Omastar
Corsola

Water
Kabutops
Omastar
Corsola

So if I were to run those three pokemon I could have 3 free pokemon.

My predessor in the Forest Gym went Grass/Poison, and I belive that *did* leave him with three wildcards. You could even have an alternative Grass/Poison on the bench! (Venusaur, Victreebel, Roserade, Vileplume)

Sadly, that leaves half your team vulnerable to the same attacks. A good sweeper would destroy them. Good thing I'm just not that into Poison. I much prefer my current typing :-D

Yep, if your gym typing permits more than one Dual-type you can have 2 wild cards.

As I posted when I was the Beacon Gym Leader, there are only one Electric/Water, one Electric/Steel, and one Electric/Ghost, so your dual typing is limited. You could however do Electric/Steel and use a Magneton and Magnezone for two Electric/Steel, but Magneton is a bit weaker and can be a handicap with it being weak to the same things as Magnesone, however both can learn Magnet Rise and then both would be immune to Ground-type moves for 5 turns. Which Magneton is 10 Base Speed points faster and would be the better option to use Magnet Rise and then switch in Magnezone to take advantage of the Ground free switch.

Since i did announce i will definitely have Infernape and Blaziken (being the only Fighting/Fire) in my team, i do feel members do take advantage of this leaving both of them ultra vulnerable. I might have to re-think my strategy.

Gym Leaders are at a disadvantage at all times. A good battler knowing your Gym Types should be able to come up with a basic strategy to defeat those types, but if they really think about it, research can almost give them the exact Pokemon you will be using.

Challengers atleast have a basic idea of what a Gym Leader is bringing to the table and a Gym Leader knows nothing of their opponents team. Gym Leaders never discuss opponents teams with each other, so everything is still a surprise.

This is all true.

Another thing to remember when challanging a gym is that we tend to get challanged very regularly and are *very* familiar with our own teams. The Gym leaders are generally well prepared to deal with the most common threats to their types. Does this mean we have every base covered? No, of course not. (Well, maybe Babal :) )

What it does mean is that we are not going to be suprised by a fast Infirnape with Close Combat and Flare Blitz or a Weavile with Ice Punch or a Starmie with Lighting Bold and Surf. Are these pokemon still threats? Of course they are. But don't expect one to sweep an entire Gym because the gym is weak to them. All the Gym leaders are smart enough to have a way to faint most all the OUs.

Na Infernape with Close Combat and Earthquake could take out the old Beacon Gym Team of Electric/Normal. The Beacon Gym with just Electric has only one weakness, but almost every big nasty Pokemon can learn Earthquake in some form or another.
